JustRite Summer Release #1- Preview Day One -Preserves and Blog Candy

Welcome to the beginning of our Summer Release #1 Reveal. We are very excited about our Summer Releases as we have a new illustrator and you are going to love our new look!! Does the whole process of canning seem intimidating? Get your feet wet by starting with these Spicy Refrigerator Pickles or Strawberry Freezer Jam.

Spicy Refrigerator Dill Pickles
This is a wonderful, spicy dill pickle with a nice hint of sweetness.
PREP TIME 15 Min READY IN 10 Days

INGREDIENTS
12 3 to 4 inch long pickling cucumbers
2 cups water
1 3/4 cups white vinegar
1 1/2 cups chopped fresh dill weed
1/2 cup white sugar
8 cloves garlic, chopped
1 1/2 tablespoons coarse salt
1 tablespoon pickling spice
1 1/2 teaspoons dill seed
1/2 teaspoon red pepper flakes, or to taste
4 sprigs fresh dill weed

DIRECTIONS
In a large bowl, combine the cucumbers, water, vinegar, chopped dill, sugar, garlic, salt, pickling spice, dill seed, and red pepper flakes. Stir, and let stand at room temperature for 2 hours, until the sugar and salt dissolve.
Remove the cucumbers to three 1 1/2 pint wide mouth jars, placing 4 cucumbers into each jar. Ladle in the liquid from the bowl to cover. Place a sprig of fresh dill into each jar, and seal with lids. Refrigerate for 10 days before eating. Use within 1 month.

Sweet and Sour
Acid is necessary in preserving not only for flavor and texture, but in preventing bacterial growth. In making pickles, acid is an important part of the fermentation process. In fruit preserves, lemon juice is typically used as the acid, while vinegar is more common in vegetable preserves. Preserves made with low-acid foods must be processed in a pressure canner to prevent any bacteria from growing
Making jam can be an ambitious undertaking in the midst of summer's heat. The solution? Freezer jam. Not only is it easy and safe, but it tastes remarkably like fresh fruit since the jam is never cooked.

If you haven't made jam before you will need to purchase one key ingredient -Pectin. Pectin is an essential gelling agent. It is crtitical for jams and jellies.Using the proper ratio of sugar, acid and pectin is critical for jams and jellies, as it determines the texture and flavor of the final product. Pectin is found naturally in many fruits: apples, quince, plums, red and black currants, gooseberries and oranges all contain high pectin levels. Under-ripe fruit contains more pectin than ripe fruit, but is not recommended for preserving due to its lack of flavor. Most recipes call for added pectin, in either liquid or powdered form; there are also special pectins available for making low-sugar preserves. Jams and jellies made without pectin must be cooked longer, depending upon the amount of natural pectin in the fruit.

Fresh Flavors
When selecting fruit or vegetables for canning, choose the freshest available, preferably picked that day. If you don't have a garden you can still get fresh fruits and vegetables by going to U-pick farms and farmers' markets.

Strawberry Freezer Jam
This jam is quick, easy and delicious on toast, ice cream or even in milkshakes! Keep jars of this in the freezer and take them out when you are ready to use them. Once thawed, they will last approximately 1 month in the refrigerator. If it lasts that long!"

PREP TIME 10 Min COOK TIME 5 Min READY IN 25 Min
Original recipe yield 5 pints

INGREDIENTS
2 cups crushed fresh strawberries
4 cups sugar
1 (1.75 ounce) package dry pectin
3/4 cup water

DIRECTIONS
Mix crushed strawberries with sugar, and let stand for 10 minutes. Meanwhile, stir the pectin into the water in a small saucepan. Bring to a boil over medium-high heat, and boil for 1 minute. Stir the boiling water into the strawberries. Allow to stand for 3 minutes before pouring into jars or other storage containers.
Place tops on the containers, and leave for 24 hours. Place into freezer, and store frozen until ready to use.

I can't believe I'm the first to post to this one. I've been wanting to try the JustRite stamps for a while but was unsure how to use them. Kathy in Australia explained it to me so I'm thinking 'now is the time'.
This is such a cute idea and I love making preserves and jams. I would probably choose the Preserved for you 1st (I would love it to be the handgrown and preserved but one day!!) My favourite chutney(Christmassy Fruit Chutney) uses
1 cup sutanas
1/2 cup pitted dates
1/2 cup Pinapple wedges
1/2 red capsicum
21/2 tblsp brown sugar
3/4 cup white wine vinegar
1 cup water
1/2 tsp crushed red chilli
1/2 tsp crushed garlic
Chop all ingredient add together in a stainless steel saucepan and bring to the boil.
Reduce heat and simmer for 40 min or until thick, stiring occasionally.
Add salt and pepper if desired.
Store in an airtight container in refrigerator for 2 - 3 weeks (if you can wait that long)
This can be kept for up to 2 month.
I make it every now and then not just at Christmas! Its great with cold meats, cheese etc.

I'd definitely use the salsa one. i'm going to be making salsa this summer--along with jam, jam and more jam, with a little jelly thrown into the mix. Maybe pickles too!

What an adorable set! - My Mom and I make jelly every year form grapes in her yard - along with pickled peppers, eggplant and so on - this will be a valuable set to use when putting gift baskets together at the holidays!

Hi! This is a great set. I love them all but would probably use the Salsa stamp first, then the pickle stamp, then the jelly one. This brings back so many great memories of my Mom canning items when I was a child. She was the stay at home attentive Mom and all our friends were always at our house.

I love this set! How cute is it to make your own canning labels??!! I would probably use the Salsa stamp first. I recently bought the Magic Bullet and my hubby is addicted to salsa. But I would have to pull it away from him in order to give it as a gift! LOL! Plus I planted tons of tomato plants this year so I may have to can some of it!

Also, I am tempted to try making bread and butter pickles because he is eating those like they are going out of style.

Oh these are ALL yummy! I would use the Grown, Pickled and Preserved stamp first. I am picking yellow squash right now and am planning on pickling them with a dill recipe and although that sounds awful... let me tell you that everyone loves these! Squash is the one thing I can grow a lot of here so that would be my first one. I also love making jams and jellies!

So cute! I would probably use the Salsa one first because that's what I make most out of all the labels. BUT, my grandfather and uncle are always making jellies and jams, so I would use that one to make some great labels for all their jars! And gramps is so hard to buy for, that these would make perfect gifts!

I think these stamps are AMAZINGLY adorable, and I want to use them all! The first thing I would do is make up a big batch and give them as a gift to my mom. She makes so many homemade goodies and loves to give them away. I would love to be able to make these for her!

Love this set!!! I would use Grown, Pickled & Preserved around the basket of veggies since I can so many things from the garden. My sweet pickle relish is a big hit with family and friends. Then I'd use the Jelly & Jam one for my apricot jam. I actually have to box up several jars and ship it back east to my family. Can't wait for this set to be released!!

Which set would I use first..Oh my goodness that is too hard to say! I love them all! But if I HAD to pick it would be the perserves and jam. I just love making homemade jam every year and this would make my presentation so much prettier!

I would definitely use the salsa stamps first because I love making homemade salsa but this is my first year of having my own garden and i would love to use the pickle stamp I think it rocks so hopefully the cucumbers i planted arrive in time and maybe I'll be lucky enough to win this stamp set so I can use it on my pickles!

I would use the from my garden one most..but they're all great. My favorite recipie is simple...it makes FABULOUS pickles.
Take regular store pickles-any kind. Drain the juice. Add 1/2 cup sugar or splenda (larger jars may need more sugar--this is for a standard jar). Put on lid TIGHT. Put in fridge. Rotate jar from top to bottom every other day until sugar completely dissolves...the pickles will "rejuice" and taste FABOO>

What a fabulous set! I would defineatly use the Salsa set first, as my hubby grows tons of Tomatos, Onions and different types of Sweet, Bell and Jalepano peppers every year. Since I had a heart problem, Salsa is one of the best foods for me to eat and I love it too! Also, because of mice and other pests, we put most dry goods in Ball Jars and seal them with my seal them with my FoodSaver! This would be a great way to label them! First I need to say I am a Stampin Up Demo. Everyone always tells me I onlyneed to use Stampin Up Stamps. But when I see what you have to offer how can any one not have just one of your stamp sets. These are really cute! I would use the liquid gold stamp first to make labels for my friend who jars up her own honey. Then the salsa label cause it's so cute. My recipe would be for pickles from my grandma, she made the best bread and butter pickles. I can remember eating them straight from the jar on the back porch!

There is no doubt about which image I'd use first ... Jams * Jellies * Preserves!!

Our church has a huge Strawberry Festival every June and I'm in charge of making the jams and jellies sold at our Country Store. I've been doing it now for eight years and to date have made over 8,000 (yes, you read right) jars of jams and jellies. We offer 15 strawberry-something flavor varieties. My all-time favorite is Strawberry-Lemonade. The recipe is as follows. (Please note that this recipe is for a double batch, yielding approx. 18 8 oz. jars. To make a smaller batch, simply halve the recipe.) Enjoy!:

- 10 cups crushed strawberries
- Zest from 1 large lemon (no pith)
- 1/2 cup lemon juice PLUS fresh lemon juice squeezed from large lemon used for zest
- Pat of butter
- 2 boxes pectin
- 14 cups sugar


 In an 8-quart stockpot, stir together strawberries, lemon zest, lemon juice, pat of butter and pectin

 Bring mixture to a boil, stirring constantly

 Add sugar

 Stir constantly until mixture comes to a full rolling boil

 Do final rolling boil 3 minutes

Yumm-y!!

Awesome stamps! I love the Preserved for you stamp. I can definitely use this with my home-made strawberry freezer jam. My grandma and mom were famous for theirs. I use the same recipe but somehow it just isn't the same - still good - but not like Ma and Grandma make! :-) Is anything ever as good as Mom makes? LOL!

Too awesome! Every 2 years I make strawberry freezer jam. It is by far my family's favorite! Nothing beats homemade- hands down! I would use the jams/jellies stamp!

This is a fantastic set! I goota have it, either by winning it or buying it. I have a garden FULL of FRESH Veg. I have given veg. to all the neighbors (I know they hate to see me coming with a bag in my hand. MORE Veg.)! It would be great to have the "from my garden to you", I think I would use that one first then I would use the Salsa next. We have so many tomatoes coming in right now and we always make fres salsa. YUM! We also just put blackberries in the freezer waiting to make jelly. (we had our son's wedding to go to in Tx. so we had to wait on the jelly). How soon can I order this set? I know they ship within 24 hrs. I never win anything, I just soon buy it ASAP. I will give them a call. Thanks for such GREAT stamps!! This one is JustRite for me!!!!

I would use the jam, jelly and preserve stamp first as I have a batch of elderberry jam that I will be making shortly and it would look nice on top and on the front of that. My favorite jam recipe is to follow the sure jel light recipe for blackberry jelly, but I use every berry I have, instead of just blackberries (blackberries, raspberries, strawberries, currants, blueberries) and mix it up until I have the amount needed for the recipe (different every time, but good every time too.)

I think I would use the salsa image the most. I actually planted all the necessary ingredients in my veggie garden this year - well except not garlic, but I do have garlic chives.

I've always dreamed of being this Martha Stewart type of domestic goddess who would put up all sorts of wonderful canned goodies from her garden..... LOL .... I am anything but! Still, a girl can dream, can't she?

I think "we" (read my mother wouldn't let me trash her kitchen so she did it herself) tried to make raspberry jam/preserves once, when the wild raspberry bushes in the back yard had a particularly good year. I have no clue what recipe we used.

Love the new stamps! My favorite item/receipe are the Refrigerator Pickles. The receipe is so easy. I've canned only two things, but the dill pickles were my favorite - the receipe called for rock salt (it melts ice in the winter). It wasn't very easy to find in the middle of July!!!!

Preserved for you would be the first stamp I would use. I love canning and giving it away as gifts. My favorite recipe is "Heinz Hot Dog Relish" I just don't use it for hot dogs, I like it better than the green pickle relish.

Wow, what a terrific stamp set ... this would be great to make labels for a relative who makes her own pickles and various types of jams .. she often gives them to other family members for gifts and I could make up some of these which would even make them more special to the reciprient.

I would probably use the pickles stamp first. Last year was the first year we tried to can pickles (we did both refrigerator and regular canned). They were soooo good! The one thing that we found out with the canned, the longer they sit on the shelf, the better they are. Also, if you add some peppers to them, they get spicy. Those were the favorites.

I make Jam and Jelly every summer and label them with painters masking tape. Now I can label everthing in a very classy, professional way. I will probably use the Preserved for you stamp first.

I think the first one that I would have to use would be jams, jellies, preserves followed by salsa! I don't think anything beats homemade strawberry jam or crab apple jelly :)

I would use the Jams Jellies Preserves stamps first with the recipe for Freezer Jam. I have wanted to try making freezer jam for years but never seem to get around to actually doing it. So the stamps would be a good motivator. As a child, I used to help my mother can peaches and tomatoes; delicious results but hot, hot work as we did not have air conditioning. The freezer jam sounds so much easier and cooler! Iris

This is a GREAT set! I would love to win it, but if I don't, I am buying if for sure! My Grandaddy, who is 94, a WWII vet, and who has had 5 hip replacement surgeries has ALWAYS gardened. He now lives in an assisted living home and they have a garden. I would use the "from my garden to you" and make tags Grandaddy could put on his vegetables. I think he likes to grow things just to give them away. What a great set!! I have so many uses for these I can't wait to get my hands on them!!

Ooh, I would use the Salsa label first! I have a great English Chutney recipe (I'm from the UK), very hot and spicy and similar to Tillymint's recipe, that I like to give to my friends and neighbors (the recipe attached to a small jar of the Chutney.) That Salsa stamp would be perfect!
And I so want to try that freezer Strawberry jam recipe--thanks for posting that!

I love ALL of those new images, but I think the first one to see ink in my home would be the Maple Syrup one (I make homemade maple syrup for my family about once every week or two). I think adding a cute label would be fun, and, if it's possible, it might even make it taste better. ;)

I think my favorite recipe has to be a nectarine-raspberry preserves that a former neighbor of mine used to make and gift us. It was THE best jam I'd EVER tasted! Maybe what made it especially yummy was that the nectarines came from our tree. ;)

We have a nearby place where we can pick strawberries, which we do several times during the season. So I would probably use it for Strawberry Preserves first.

Cute set! i have never done any canning before but my kids love pickles and my mom makes strawberry jam - so it's a toss up between the jelly and pickles! Thanks for the chance to play!

WOW!!! What a great set of stamps. They will be perfect as I prepare for the festive season...that is not so far away. As the weather warms and the garden produces fresh fruit, vegetables and herbs here in the southern hemisphere, I can create some cards, tags and pressies using this Preserves Border and center set. I would first choose…mmmm….. too hard … mmmm …thinking I would use the “from my garden to you” with the fabric topped jar as the center and then all the others.

These recipes below are great to use fresh produce or can use preserved mangoes and strawberries. I preserve my veggies, fruit and herbs so I can enjoy all year, but also they make great gifts which all appreciate and enjoy. A little hour or two in the kitchen followed up with and hour or two creating the tags, cards and bottles gives you many gifts to give that are personal, economical and loved by the receiver.
Decorate the bottle and give the recipe as part of the gift…
Try these you can either prepare the final product, the filling or some of the ingredients such as the dried mango, limes or strawberries…………
Mango Curd Filling

1 cup dried mango
1cup water
1 large fresh
3/4 cup sugar
5 egg yolks
1 Tablespoon lime juice
1/2 teaspoon ginger
1-2 Tablespoons butter



Soak dried mango in water overnight
Peel and dice fresh mango
Add to water with soaked mango
Add sugar
Simmer all mangoes until tender
Place in Food Processor and puree until smooth
Beat egg yolks
Add egg yolks, lime juice, ginger and cook at low heat until it thickens. Remove from heat and add butter
Chill and refrigerate to store
Fill tarts or use on scones (England) / biscuits (USA)

Variation……
Great for a sauce on ice cream, (and chicken)…thin with a little water, milk or cream…can be warmed to serve.


Strawberry Basil "Bruschetta"
2 slices cinnamon raisin bread
1/4 cup mascarpone
3 Tablespoon honey
4 large strawberries, rinsed and hulled, cut in half
1 Tablespoon fresh basil leaves, chopped into a fine chiffonade
Toast the slices of bread, then cut diagonally for four toast "points." (Alternatively, you can use a round cookie cutter and cut out toast rounds; cutting diagonally simply prevents waste)
Mix together mascarpone and honey. Pipe or spread honey mascarpone mixture onto bread. Sprinkle with basil chiffonade. Top with strawberries and remaining basil.

Great for something quick and easy to prepare that is a little different. This stamp set will give me hours of fun and add to the presentation of my gifts and the fun I have in creating them.

I have been wanting to try the JustRite Stamps and this set is darling! I make a spicy peach mango jelly that my friends ask for every summer. I use it as a topping for mini brie tartlets. I think I would use the "preserves" first and then keep going with the rest of the stamps, filling up all my mason jars with my other recipes of homemade goodies!!

I'd love to make my landscaper a huge set of tags. She is always bringing her clients fresh goodies from her garden. And my Stepmom, sister and friends all have gardens....I could use this over and over.

I make peach and strawberry jam and cinnamon chunky applesauce

(have you ever had it hot?? oh it is to die for. Put a spoonful in a crescent roll triangle, fold over and pinch the edges, cook and serve!... homemade apple turnover!)

but I don't have the recipe. I am really just my friends assistant and I love it!

I would use the salsa stamp first, as I live in TX and LOVE salsa! My grandmother used to make delicious bread & butter pickles, with cloves.

"Preserved for You" would be the first label I would like to use. My Grandma Houston made crab-apple butter that was so good... she made canned apricots from her tree that were to DIE for yummy!

I love all the images. Although I've never tried to make jam or jelly, make pickles or jar any salsa that I've made, this new release will keep me busy all summer. My goal is now to try making all sorts of goodies to give away, just to use the new set. Salsa will be my first, then on to the pickles. Thanks for bringing such a wonderful set. Nancy

This set id super cute!!! I would use the one for "Salsa". My mother-in-law makes the best homemade salsa. I wish there was a recipe that I could share, but she does not follow one. She just adds want is needed and "poof" the best salsa ever.

It would have to be the Salsa label first. Every summer we make jars and jars of it. My husband planted 12 tomato plants this year just so he could try different kinds of tomatoes in "his" salsa recipe. Besides the regular tomatoes we have yellow, pink, romas, heritage and even black tomatoes planted. We will need these labels for sure.

I just love the shape of the jars! I probably would use the salsa first-I make salsa and pico de gallo most often. But my favorite thing to make is a hot fudge sauce--all my friends think it is definitely "Liquid Gold"!

What a cute set. Id have to say that the jams and jellies would have to be used first. My favourite recipe for jam is loquat jam.. i grew up in bermuda and have fond memories of hanging in the loquat trees to reach the ripest fruits:)

I have been making homemade freezer jam for years, so my first pick would be the "jelly" stamp,but I just love all of them. I also canned alot and made homemade pickles, salsa,bread,squash relish hmmmmmm and many more. What a great set! Always love all sets.

These stamps are all so cute! It's hard to pick one! I am ready to start making salsa, although my tomatos are far from ready! So I guess I would pick the salsa one! My favorite canned item to make is Green pepper jelly with hot pepper flakes! It's so Yummy! Great Christmas gift too!!

I love these stamps all of them. But I think I would use the strawberries first only because my dd and I went to a strawberry patch and picked some. I would want to scrapbook these first.

These are so cute it will be hard to decide which to use first. I would probaly have to do one of each just for the fun of it. Then I would have to send a text picture of them to each of my 3 sisters.Then after a bitter battle of who wants me to make which one for them I will make labels for the sister I can get the most out of in return first.lol
